Creamy chocolate mousse cake

For the dough:
Flour

Method:
1. Add all the ingredients for the dough to a bowl and knead them together. Refrigerate before continuing.
2. Take about a quarter of the dough and put it to one side. Press the rest of the dough into a small springform cake pan; the bottom of the pan should be covered and there should be a one-inch border around the edge. Use a fork to poke holes into the dough to prevent air pockets from forming during baking.
3. Add sugar and milk to a pot. Add several spoonful of the milk to the pudding mix before tipping it into the pot. Cook the mixture and continue to stir until it has thickened. Next, stir in the melted chocolate and cream into a smooth mixture before adding it to the pudding. Once well mixed, spoon the chocolate pudding mix onto the chocolate cake base and smooth it flat.
4. Roll the dough out in a circular shape and cut it into eight strips of equal thickness. You won't need the two outermost strips. Now place three of the dough strips on top of the cake, keeping distance between them. Next place the three remaining strips on top of these so that you create a lattice design. Use the prongs of a fork to press the dough strips to the edge of the cake. To finish, bake the cake in a convection oven set to 170 C° for 40 minutes.
