Method:
While making desserts based on beaten egg whites, it is important to create an as consistent as possible egg white mass.
How do we achieve this:
1. Degrease the bowl with some alcohol vinegar.
2. Dry the bowl with kitchen paper
3. Make sure your egg whites are virgin. No yolk should be left inside the whites.
4. Add ½ teaspoon of fresh lemon juice to your egg whites and then beat them with your machine or by hand until they are solid. You should be able to lift the bowl upside down without losing your substance.
