Jerk chicken

Ingredients:
Chicken, quartered
Vegetable oil
Soy sauce
Medium onion, chopped
Medium scallions, chopped
Scotch bonnet chiles, chopped
Garlic, chopped
Five spice powder
All-spice berries
Pepper, ground
Thyme
Nutmeg

Method:
1. In a food processor, combine all ingredients with exception of the chicken quarters to a thick paste.
2. Pour the marinade into an oven tray and add the chicken quarters. Coat the quarters on all sides, cover the tray and allow to rest overnight in the refrigerator.
3. Next day, bring the chicken to room temperature and grill it on all sides until it is done. For a more smokey flavor, cover your grill during this process.
4. Don’t burn your chicken. Make sure you have control over the heat: work with heat zones on your range so you can move your grill plate from medium high to medium or medium low if required.
5. Serve with baked potatoes and salad
